This healthy and delicious red lentil soup with coconut milk is hearty and deeply satisfying. The coconut milk is very good for your skin and provides the good fat that your body needs along with red lentils which balances your meal with a great source of protein.
Ingredients
2 TBS Coconut oil (or olive oil)
1 medium onion, dice
1 Carrot, chopped
1TBS of fresh ginger, peeled and mince
1Tsp ground cumin
1/2 Tsp ground coriander
1/2 Tsp Turmeric
4 cloves of garlic, mince
3-4 vegetable stock
1 cup of red lentil, soaked at least 8 hours before cooking or one night before.
1 cup of coconut milk
1TBS of fresh Cilantro, chopped.
salt and pepper to taste
Instructions
Heat oil in a large pot
Saute onion about 5 minutes
Add ginger, cumin, coriander, Turmeric and garlic. Stir for 1-2 minutes.
Add the vegetable stock, lentils.
Boil it at a medium temperature for 10 minutes and reduce the heat until lentils are tender, about 5-10 minutes and turn it off.
Add coconut milk and allow soup to cool slightly before puree in a immersion blender until smooth.
Reheat to serving temperature.
Salt and pepper to taste.
Decorate with the cilantro on the top
