Cauliflower Soup

One cup of cauliflower has as much Vitamin C as an orange and more fiber than a potato, contains an excellent sour of folate and vitamin B.


Ingredients
  • 1/2 cup minced shallots

  • 1/4 cup dice celery

  • 1 teaspoon of coconut oil ( optional olive )

  • 6 cups cauliflower florets divided (1 head)

  • 1 cup peeled and dice potato (russet potato)

  • 3 cups vegetable broth (low sodium)

  • 1 can coconut milk

  • 1 bay leaf

  • 4 spring fresh parsley

  • 4 spring fresh thyme

  • Hımılayan Salt and Pepper (to taste)

  • Coconut flakes (optional)


Directions
  1. Cook the shallots and celery for 5 minutes.

  2. Stir 5 1/2 cups cauliflower and potato.

  3. Add broth, coconut milk

  4. Bring to boil and simmer for 30 minutes

  5. Season to taste
