Ingredients
1/2 cup minced shallots
1/4 cup dice celery
1 teaspoon of coconut oil ( optional olive )
6 cups cauliflower florets divided (1 head)
1 cup peeled and dice potato (russet potato)
3 cups vegetable broth (low sodium)
1 can coconut milk
1 bay leaf
4 spring fresh parsley
4 spring fresh thyme
Hımılayan Salt and Pepper (to taste)
Coconut flakes (optional)
Directions
Cook the shallots and celery for 5 minutes.
Stir 5 1/2 cups cauliflower and potato.
Add broth, coconut milk
Bring to boil and simmer for 30 minutes
Season to taste
